Jen Cousineau Part 2

Ok so are you ready for part two? It even will have Gizzy in it!

5) Do you need a nice quiet space to write or are you blasting your music and writing?

I blast music. I have a very difficult time writing without music blaring in my ears!

6) If you could give one tip to someone who wants to write what would it be?

WRITE! If you want to write, then write. Don’t give up, and no matter what you hear, read, or what people tell you, if YOU believe in YOU and YOUR story, and are proud of YOUR story, then it doesn’t matter. Write for you!

7) What is the big dream? In other words where would you like your writing to take you to in the future?

I would LOVE to be able to resign from my ‘day job’ to write fulltime. During the day. When my kids are in school. Instead of late nights and back to work early mornings. That is my dream.


8) If you could meet anyone living or dead who would it be?

My Uncle Mark. He’s the only close relative that I’ve never had the honor of knowing :(

7) Do you have favorite animal not your pet's but like wild animals?

Monkey, white Siberian tigers, kangaroos, and koala bars

8) Do you like city or suburbs better?

Hmm… I like them both. There’s times I like the quietness of suburbs, they’re peaceful. But there are definitely times when the mood strikes and I prefer a loud, busy city.

9) If you could live anywhere where would it be?

Italy or Ireland!! (Or at least visit there…)

10) Do you have a favorite holiday?

A few - Christmas, Halloween, and St. Patty’s Day. Well, and my birthday but I don’t think that counts ;)

11) Do you like to cook?
I used to. But my husband and daughters are the pickiest eaters to ever exist so now… I despise it :(
12) Do you have a favorite place you like to be?

Wherever my family is.

Anything I can get my teeth into ;)

No. I’d rather play or sleep.

I’m not sure…
6. Do you like off the leash parks better than walks?
As long as I get to play outside, I don’t care where I am.
7. Do you like having belly rubs?
I llooovvee a good belly rub!
8. Do you like it when it's warm or cold out? Day or night?
I’m not a fan of the cold as I came from Georgia to Wisconsin. So this weather is a bit too drastic for me. Unless the sun is shining. Then I’m good ;)
9.  What is your favorite treat? 
Chew bones!

10. Do you sleep on a human bed, a dog bed, the top of the couch, the floor or the crate?

I sleep with my Mommy and Daddy, but I keep hearing Mommy tell Daddy that eventually I have to start sleeping in my own bed :(

Jen Cousineau

So this next author gave me so many teasers that I thought I would break it in two parts. I hope you enjoy it.

1) Can you please introduce yourself to everyone?

Hey everyone! I’m Jen Cousineau, wife to an amazing man I met when I was seventeen, and mother to two tornadoes – Kaylynn & Lilly who will be four in January. I live in Wisconsin and I work from home for my day job so I don’t have to brave the cold ;) I also am a chapstick and coffee addict. (Yes, I truly mean that!) 






2) Would you like to share any work you have done or doing? 

I’ve released two books thus far, A Deadly Bet (book one in the Summers Series) and Licentious, which is a standalone. A Secret Gamble (book two and conclusion of the Summers Series) releases later this month, and To My loves which will be a standalone and a little different than my first three books will be releasing early 2015 J

3) Do you have a favorite genre?

I love most genre’s but I tend to sway towards mystery/suspense such as James Patterson style, or romance/erotic romance J

4) Did you always want to write or what inspired you to do it?

I started writing poetry when I was younger, which turned into song lyrics. Then I eventually just stopped with life getting so busy, but after having my girls I had these stories in my head that just became so loud I started to think I was going crazy. One day I decided to start writing them down. Go for my dream and love of writing to show my girls that dreams can come true with hard work and dedication.

Do you like pizza or salad?

 PIZZA!!

What do you like more cake or fruit?

Hmm… I love fruit but I also have a sweet tooth. So… cake with fruit? ;)

3) What is your favorite kind of music?

Oh man. This is as bad as asking me my favorite author! Lol I love ALL music except classical and heavy metal. But I guess… I sway between Indie and country the most..?

4) Who is your favorite Author? 

Oh look! LOL This is a HUGE list! The first that come to my mind though would be Nicole Edwards, James Patterson, Harper Sloan, Chelle Bliss, Ryan Michele, Katrina Alba, Stephanie Gresham, S.l. Schiefer, Mia Sheridan, Erika Ashby, and sooo many more!

5) Do you like Vampire, Werewolf, Fairy or shifter men when you read for pleasure?

I always say that I don’t do paranormal. Yet, 99% of the time when I give one a try, I love it. I’ve never read anything with fairies but for the rest, it doesn’t matter as long as the story is strong enough to pull me in J

6) Do you have pet's?

I do! We just rescued a puppy from a kill shelter. He’s a cute little-Big rascal named Shadow who’s a lab mixed with a german sheppard.

Salted Caramel Shortbread Bars

Ok first off make sure you have a candy thermometer!!! 
These looked really good so I jumped right in.
You have to make the crust first I make mine like a cake not a bar... you can do what you want. 

Shortbread Crust makes a delicious addition to so many desserts. Made of three ingredients, this simple shortbread crust is easy works for pies, cheesecakes, tarts, and so many other desserts.

Ingredients
  • 1 cup (2 sticks) salted butter, softened
  • 2 cups all-purpose flour
  • ½ cup confectioner’s sugar
  • Instructions
    1. Preheat oven to 350º F.
    2. Mix together butter, flour, and confectioner’s sugar. Press into the bottom of a 9×13-inch baking pan, a pie plate, tart pan, or other pan for your baking.
    3. Bake for approximately 12-15 minutes, or until lightly golden brown.
Remove from oven and allow to cool completely before filling.



Filling:
Salted Caramel Shortbread Bars make a great addition to any dessert buffet.

Serves: 12
Ingredients
  • 1 recipe shortbread crust
  • Salted Caramel Layer
  • 1 cup butter (2 sticks)
  • ¼ cup granulated sugar
  • 1¼ cup packed brown sugar
  • ¾ cup light corn syrup
  • 1 teaspoon sea salt
  • ¼ cup half and half
  • 2 teaspoons vanilla extract
Instructions
  1. Shortbread Crust
  2. Preheat oven to 325º F.
  3. Make shortbread crust according to directions. Set aside to cool as you prepare the caramel.
  4. Salted Caramel Layer
  5. To prepare the caramel, mix all ingredients through half and half in a heavy bottomed, 3-4 quart saucepan.
  6. Cook over low to medium heat until the caramel has reached a warm golden brown color and has reached the 250º F on a candy thermometer, or the hard ball stage.
  7. Remove from the heat, add vanilla extract, and beat until creamy with a wooden spoon.
  8. Pour onto prepared shortbread crust and allow to cool for about 10 minutes. Cover with plastic and place into the refrigerator for 1-3 hours to overnight to allow caramel to firm.
  9. Store in the refrigerator to keep the caramel firm, recommended.
  10. Remove from the refrigerator about 20 minutes before ready to serve.
Notes:
Prep time does not include time for chilling salted caramel shortbread bars in the refrigerator for caramel to firm before serving!
